Traditional Boxty

Boxty is a traditional Irish pancake recipe using a blend of Irish champ and shredded potatoes, simply seasoned with salt and pepper. Traditionally, the boxty is stone-baked in front of a turf fire to produce an unusual but classic way of wrapping delicious ingredients. At Molly Maguire’s, we unfortunately don’t have the turf fire but we’ve certainly taken this time honored recipe to a new and delicious height.
